When Pooja Bavishi decided to launch her ice cream company, Malai, she had an unambiguous, personal view. "I created Malai because I wanted to highlight the flavor that I grew up eating as a first generation Indian American in a popular and mainstream fashion," she says.

"Everyone is a victim of an ice cream memory from their childhood, and the majority of them are related to visiting your local ice cream shop for a scoop with loved people," Pooja says. This nostalgia-infused fusion is what has brought Malai from being a stand-in in markets and local food halls to freezers in grocery stores and pop-up carts all over New York City, and a bustling flagship store in Brooklyn offering local and national delivery.
